Ingredients:
1 cup broccoli microgreens
½ cup baby spinach
¼ cup cucumber, thinly sliced
1 tbsp sunflower seeds
1 tbsp paneer cubes (optional, for protein boost)
Dressing:
1 tsp olive oil
Juice of ½ lemon
A pinch of pink salt
Freshly ground black pepper
Instructions:
Step 1: Gently wash and pat dry the broccoli microgreens and baby spinach.
Step 2: Combine greens with sliced cucumber in a large bowl.
Step 3: Add in sunflower seeds and paneer cubes if using.
Step 4: In a small bowl, whisk together olive oil, lemon juice, pink salt, and pepper.
Step 5: Pour the dressing over the salad and toss gently to coat.
